How can an English course connect food with literature? At
Penn State University, where lessons from the Bard are taught as well as those from the barn, a class called
Eat Your Ecology (English 297C) literally brings students closer to their food.
The semester-long class traces the origins, environmental and social impacts, and dietary culture through key readings and journaling and experiential aspects through visiting and working at places like the
Blue Rooster and Friends Farm. Students forage for food and cook meals using local, sustainably produced foods.
